Brazil - Chocolate / Nutty / Body
Brazilian coffee is known for its chocolatey sweetness, low acidity, and full body. Often featuring notes of nuts, cocoa, and caramel, it provides warmth, balance, and structure. As one of the world's most widely used blending origins, it forms a dependable foundation for espresso and milk-based coffees.

Colombia - Balance / Sweetness / Clean finish
Colombian coffee is known for its balance, mild acidity, smooth body, and clean cup. Grown at high altitudes and typically washed, it offers clarity and consistency. Often considered a benchmark, it represents a classic, approachable style that reflects the essence of quality coffee.

Coffee Finds Its Balance and Harmony Over Time

Many people assume that the fresher the coffee, the better it tastes. Coffee, however, is a little different. Much like wine or freshly baked bread, coffee continues to evolve after roasting. While it may be fresh, it has not yet reached its most balanced expression. In fact, many specialty coffees reveal their best flavour several days after roasting, often reaching their peak within the first few weeks.

Why Coffee Needs Time After Roasting

Coffee continues to change after roasting. During roasting, large amounts of carbon dioxide (CO₂) are created inside the bean. Immediately after roasting, that gas is at its highest level and can make coffee taste sharper, less sweet, and harder to extract evenly.

As the coffee rests, CO₂ gradually escapes through a process known as degassing. This allows sweetness, body, aroma, and finish to come into better balance. For espresso, excessive CO₂ can contribute to uneven extraction, channelling, excessive crema, and sharper flavours. For filter coffee, it can create an impressive bloom while making it more difficult for water to contact the grounds evenly.

Recommended Drinking Window

For most medium to dark roast coffees from 0.25h Coffee, we recommend allowing the coffee to rest before brewing. Coffee continues to develop after roasting, and its flavour can change significantly during the first few weeks.

0–3 Days
Very fresh and still releasing significant amounts of carbon dioxide (CO₂). The coffee may taste slightly sharper and can be more difficult to extract consistently.

4–7 Days
Drinkable and enjoyable, but still developing. Sweetness and balance continue to improve as degassing progresses.

8–18 Days
The sweet spot. This is when we often find our coffees at their most balanced and expressive, with sweetness, body, and aroma working together harmoniously.

14–28 Days
Stable, balanced, and still highly expressive. Many coffees continue to perform beautifully throughout this period.

1–2 Months
Still enjoyable, with a gradual reduction in aroma and complexity over time.

Good news: You can enjoy our coffee with confidence for up to two months from the roast date. While the coffee may gradually lose some aroma over time, it remains enjoyable well beyond its peak window. The sweet spot is not a deadline—it is simply the point where we often find the flavours most balanced and expressive.

The Sweet Spot

Based on our roasting and tasting experience, 0.25h Coffee often tastes its best between 10 and 18 days after roasting. At this stage, sweetness, body, aroma, and flavour balance tend to come together most harmoniously. Depending on the coffee, you may notice greater clarity, a fuller mouthfeel, and a more integrated flavour profile.

Why This Information Is Credible

Coffee freshness is widely understood as a balance between carbon dioxide release (degassing) and gradual flavour loss through oxidation.

Research shows that roasted coffee releases significant amounts of carbon dioxide after roasting, and that this degassing process continues over time (Smrke et al., 2018; Wang & Lim, 2014). Excessive CO₂ can influence extraction behaviour and brewing consistency, particularly in espresso preparation.

As degassing progresses, coffee generally becomes easier to extract consistently, allowing sweetness, body, aroma, and flavour balance to express themselves more clearly. The exact timing varies depending on the coffee, roast level, storage conditions, and brewing method.

The recommended drinking window for 0.25h Coffee combines findings from coffee freshness research with our own roasting and tasting experience. While no single scientific study can determine the ideal resting period for every coffee, both research and industry practice suggest that coffee often performs best after a short resting period rather than immediately after roasting.

Research also shows that storage conditions significantly influence flavour preservation. Oxygen, heat, moisture, and light gradually reduce aroma and complexity over time. However, properly stored whole-bean coffee can remain enjoyable well beyond its peak period (Gantner et al., 2024; Strocchi et al., 2022).

For this reason, we recommend enjoying our coffees after a brief resting period and within two months of the roast date for the best overall experience.
